Stoichiometry
Definition
The mole-ratio accounting that determines how much reactant is needed for a reaction, applied here to size oxygen scavenger dosing. It sets the theoretical minimum sulfite dose.
Sodium reacts with chlorine in a 1:1 atomic ratio, so equal moles mean equal numbers of atoms even though their masses differ. Dosing by grams instead of moles can supply far more atoms of one reactant than needed, as adding 5 grams of sodium gives 1.54 times more atoms than the stoichiometric 3.24 grams. Conservation of mass holds, so the reactant masses sum exactly to the product mass.
