Boiling Point
Definition
The temperature at which the most energetic surface molecules gain enough kinetic energy to break free into vapor, marking the limit of how much sensible heat can be stored as structure.
At this point the Hydrogen-Bond Network is maxed out, with bonds stretched and molecular motion intense, having speed but not freedom. The boiling point rises with pressure, from 212 degrees F at 0 psig to 298 degrees F at 50 psig and 489 degrees F at 600 psig. Beyond it, continued energy input goes into latent heat rather than raising temperature.
