Definition
A substance’s resistance to sensible heat, defined as the energy needed to raise a unit mass by one degree. Water sets the standard at 1.0 BTU/lb per degree F.
Most metals sit near 0.1 BTU/lb per degree F, so the same energy that warms a pound of water by one degree would spike a metal by nearly ten degrees. Water’s high value comes from energy being absorbed into the Hydrogen-Bond Network as potential energy rather than immediately becoming molecular motion. This is why chilled water loops stabilize buildings, oceans moderate climate, and hot water loops carry heat through miles of piping without running cold.
